Basic Job Function:

Train, supervise and lead all Catering and Convention Services staff, in order to solicit and book banquet and catering functions, as well as the planning, merchandising and execution of the functions. Responsible for the management of all aspects of the Catering/Conference Services department in accordance with hotel standards. Coordinates details and menus for clients' functions and maintains budgeted revenues through solicitation of business while controlling expenditures. Directs, implements and maintains a management philosophy which serves as s a guide to Catering/Conference Services staff. To mentor, develop, coach and educate leadership to Operations, Business Center, Destinations Services, and Audio Visual departments.

Minimum Requirements:

Minimum of five (5) years in a senior level capacity within Catering and Conference Services. Preferably in a Director of Catering and Conference Services position
Experience working in a 4 or 5-Star property preferred
Excellent communication skills, both written and verbal
High school or equivalent education required. Bachelor's Degree preferred
Knowledge of Menu Development
Knowledge of Food and Beverage cost controls
Familiarity with Sales and Marketing tools
Excellent computer skills required; proficiency in MS Office, Microsoft Word and Excel
Working knowledge of Delphi strongly preferred

Tasks/Responsibilities:

Maintain complete knowledge and comply with all company and departmental policies and procedures
Ensure client files are kept organized and current with all required information
Communicate with clients to discuss details of their events in a timely and well organized manner
Suggestively sell menus which meet client's needs and maximize revenues
Ensure that all definite functions are detailed accurately on resumes and BEO's, signed by clients and distributed to designated departments a minimum of ten (10) working days prior to function/event
Review estimated guarantees and ensure final guarantees are obtained three (3) business days prior to scheduled function. Ensure that minimum guarantee policy and overset figures comply with established standards
Monitor changes to resumes and banquet event orders; ensure that accurate information is communicated to respective departments on a timely basis in order to best service the client
Attend and Lead BEO and Resume meetings
Check function room set-ups prior to guest's arrival, ensuring all details are in agreement with clients requirements and resort standards. Ensure deficiencies are corrected by respective personnel
Meet with clients prior to function time to verify arrangements
Welcome group contact upon arrival at function and introduce Banquet Supervisor. Ensure guest satisfaction
Observe the quality of food presentation and assist in plate-up of meals as requested. Ensure that standards are met
Solicit new and existing accounts to meet/exceed revenue production goals
Administer all phases of the C&CS department including but not limited to, sales, planning, marketing, servicing of group and social events as well as leading the C&CS sales and service associates
Work with Executive Chef and Director of F&B to develop and implement banquet menus
Create pricing guidelines for sales and service team
Administer and update Delphi Sales tool, create and maintain ongoing forecasting tools for F&B and group sales as needed
Foster and promote a cooperative work climate, maximizing productivity and team member morale for all departments involved
Answer any questions guests may have about Sea Island or the area to the best of one's ability
Maintain cleanliness and organization in all work areas
Uphold appropriate departmental standards of quality/timing
Report all equipment problems and maintenance issues to supervisor
Attends all scheduled staff and employee meetings and brings suggestions for improvement
Willing and timely execution of other duties as delegated by leadership


Physical Requirements:

Ability to kneel, crouch, squat, climb, stand, sit, balance, reach, bend, push, pull and walk for prolonged periods
If applicable, must have the ability to work for extended time periods in an outdoor environment, including sun, heat, cold, wind, rain, and higher than normal noise levels
Ability to lift, carry, pull and push up to 30 lbs intermittently throughout a shift
Ability to read, write and communicate effectively in English, both written and verbal
May be exposed to mechanical, electrical, chemical and fume hazards
 Maintain compliance with Company Resort Professional Image Policy
